Bolt resistant varieties are available. Check out these:

Cilantro – Slow bolt variety

Parsley – Giant of Italy – considered the gold standard of slower-to-bolt varieties

Arugula – this variety is mainly used for microgreens, but has the slo-bolt seal of approval
