Whether you are sick of zucchini yet or not, we’ve discovered a recipe that will make you fall in love with this ubiquitous vegetable all over again. Any recipe with 2 ingredients is our kind of recipe.
If it’s any indication of how good these are, I have zero photos to show for my efforts. They were gone in minutes, before I could snap a shot. So, turn on the oven, get out your mandoline or a sharp knife and get ready to stuff your face with delicious zucchini bites.
Baked Parmesan Zucchini Bites

Preheat the oven to 425° F and line a backing sheet with parchment paper. Oil the parchment paper.
Ingredients
- 2 zucchini
- 1/2 cup grated Parmigiano Reggiano cheese
- optional: salt and pepper or garlic salt
Method
Use a long, straight zucchino (that’s right: uno zucchino, due zucchini) and slice it into 1/4″ rounds and place them on the parchment paper. No need to leave a lot of room between the slices. Repeat with the other zucchino.
Place a teaspoon of grated cheese atop each slice. Try to keep it all on the zucchini (although baked cheese on parchment tastes pretty good, too).
Sprinkle with any additional seasonings you want.
Bake for 15-20 minutes until cheese is golden.
Consume these zucchini bites immediately! They won’t last.
