While teaching a gardening class at the Esalen Institute 18 years ago I fell in love with their Raw Kale Salad. Participants left with a copy of the page from the Esalen cookbook and I’ve been making it ever since.

I keep a PDF copy of the recipe on my desktop for the inevitable moment when someone at the party asks for the recipe. It’s a perfect way to showcase your home-grown kale in all its glory.
